Abstract

Recently, a worldwide interest has been growing in Australian native citrus fruits. With its caviar-like pulp, attractive color range, natural genetic diversity and unique organoleptic profile, the Australian finger lime (Citrus australasica) has many traits that are not found in other citrus fruits. This chapter is a review of the existing literature on its botanical classification, morphology, sensory characteristics, and nutritional value as well as on its production and industrial applications.
